I got a ton of rhubarb in my CSA crop share and decided to make a pie! I made Rhubarb crisp last time I got rhubarb in the share, so I thought I'd make something new. I used the pie crust recipe from the Better Homes New Cook Book, my old red and white checkered recipe book that my mom gave me. I've literally only used this book for it's pie crust recipe and it has been a trusty recipe. I know pie crusts can be tough and most people like to buy a pre-made one, but it's really not as hard as people think.It only takes about 10 minutes. The key is having a food processor. The other important thing is to make sure you use cold water. My mom actually gave me that tip after I called her to complain that this crust was harder to move with and had broken down the middle as you can see in the photo. So, I'm giving you some valuable advice that took her years to learn.

Looks so good, I really need to try rhubarb! I made my first pie crust in November and I was surprised how easy it was, the food processor is essential.
Rhubarb pie is so darn good! Yum!
