Zucchini overload

I have been eating so much zucchini lately it's crazy! Good thing it is one of my favorite vegetables because I definitely have an overstock of it right now. I have a huge plant in my community garden and I get a bunch of it in my CSA. I have so much that I literally eat it everyday. My favorite way to eat it in simply sauteed with salt & pepper and a spray of my misto with Olive Oil in it. I either eat that on it's own or add it to a salad. Other ways include:
* Chopped zucchini in an egg scramble for breakfast
* Added to homemade mac & cheese
* Added to pasta
*zucchini bread

Have you tried the zucchini lemon bread that is all over Pinterest? It is amazing!

Lol zucchini is on my menu this week...a zucchini and summer squash pasta with home made pesto...the taste of summer!
