Hood to Coast---Volunteer Style


My good friend Kelsey and I weren't able to participate in Hood to Coast this weekend so we volunteered for our team early on Thursday morning. And by early I mean EARLY. Kelsey rolled up to my apartment to pick me up BEFORE the crack of dawn. Like 3am. We got up to the mountain at 4:30 to start our volunteer shift. The car ride was a delirious blur of laughing out of being so ridiculously tired and not sure what we were about to get ourselves into. We told stupid jokes and laughed at stuff that was not even funny. I absolutely love that we got to experience this race from another angle----we were up that early not to begin a 3 leg race of 15+ miles over 24 hours, but to ensure that everyone else could do that. Since I've run this race the last two years, it felt good to put on the ugly orange "Race Official" t-shirt and help make sure everything went smoothly.

Overall volunteering was a piece of cake----we sat at the sign-in registration tables and had people turn in their safety agreements. We reminded them to not stop their vans on Legs 1 & 2 and to follow the speed limit and not drink alcohol. Once in a while I thought I was so funny and I'd remind the teams that no running was allowed. Some people just nodded their heads when I said that! Some people laughed.....but most were so excited to start the race they barely even listened to us, their huge smiles and enthusiasm making me drip with jealousy. 

I think the toughest part about volunteering doesn't have anything to do with getting up in the middle of the night and sacrificing your time, having to use a porta potty or not having access to coffee. It's the feeling of not being able to run the race! As we were up there we saw teams start the race every half hour. Every.Single.Time: I wished it was me. I desperately wanted to participate in the race, sit in a van for hours and hours with your teammates that you may or may not know, stay up for 24 hours straight, eat squished peanut butter sandwiches, rice cakes and chocolate. I wanted to run 3 legs, one of them in the pitch black middle of the night. I wanted to cheer my team on and have dance parties on the side of the road and party on the beach in Seaside when it was all over. But, this year I did not get to do that. I had several commitments this weekend and an injured posterior tibialis. But next year? You bet I'll be back on my team, running my heart out.

Zucchini overload

I have been eating so much zucchini lately it's crazy! Good thing it is one of my favorite vegetables because I definitely have an overstock of it right now. I have a huge plant in my community garden and I get a bunch of it in my CSA. I have so much that I literally eat it everyday. My favorite way to eat it in simply sauteed with salt & pepper and a spray of my misto with Olive Oil in it. I either eat that on it's own or add it to a salad. Other ways include:
* Chopped zucchini in an egg scramble for breakfast
* Added to homemade mac & cheese
* Added to pasta
*zucchini bread

How do you like to eat your zucchini? If you would like one and live in Portland, please let me know and I'd be happy to share my over-abundance of zucchini with you!

Hood to Coast Weekend

There is one important weekend in August that I usually plan my life around. Hood to Coast is always the last weekend in August. I have run this race many times and it's safe to say I'm addicted. As a runner, I always pray that my friends will plan around this weekend too. This year it did not happen. My good friend Liz decided to have her wedding on Friday night of Hood to Coast weekend! Initially I actually questioned if I would attend her wedding----that is how dedicated to this race I am! But then I realized I could not miss the wedding, I need to put my friends before my running! I can't believe her wedding is already here. If you missed it, you can read about her fun and fancy bridal shower and her bachelorette party

My mom's birthday is also on this weekend, but she is always understanding and plans her small festivities around this relay. However, she is turning 60 this year and we are throwing a big party! SO--two life events, a wedding and a 60th birthday, mean I will miss Hood to Coast this year.

HOWEVER: I decided to volunteer for my team! Each team is required to have 3 volunteers along the race. Volunteers literally make the race happen and it couldn't be done without them. I will be up at Mt. Hood at the start line from 4:30-8:30am on Friday morning. I'm so glad I will still get to be a part of the action, but I know it is going to make me crave participating in the race!

The Buffalo Gap

I went here for a recovery meal after a race and I had an amazing steak & shrimp! I'm not sure if it tasted so good just because I was famished or if it was really excellent! Walking into this place, I was a little sketched out because it appears to be just a bar. But the outdoor patio is really nice and serene with a trickling fountain. It was really relaxing on a hot day to sit out there and eat!

I ordered this--steak, shrimp, mashed potatoes and grilled veggies. I could not get enough of those mashed potatoes and gravy! Oh, the things that I crave after running....

My friend ordered a chicken burger with BBQ sauce and sweet potato fries. yum. I may have eaten a fry, or 10.
The Buffalo Gap is located on SW Macadam Ave. Apparently it has huge history and has been there for 100+ years! I would maybe come here again with friends, or to try the breakfast. Overall it was a bar atmosphere and not the highest quality, but delicious when re-fueling 1000+ calories after running! Now that I am injured I am craving days of recovery meals. I actually went here quite a while ago and am just now getting to posting----I miss running!

I love how cute the book theme was. I've shared several bridal showers this year and this was the last one I'll be going to this year! I am a little bummed because they are really fun, classy events where you get to hang out with your best girl friends and eat yummy food and cake. There are a couple more weddings coming up, so stayed tuned!

A Runner's Injury Work-out

What is that, you ask? Well, it's what I do when I am injured and should not be running. Normally I run about 3-4 days per week, one of those being a tough track work-out. But about 6 weeks ago I realized the annoying feeling I was having in my right posterior tibialis was in fact pain. And I remember this pain, and how it can progress into much worse pain, because I had this same overuse injury in my LEFT ankle about 2 years ago. Crap.

After a couple weeks of the dull throb I stopped running. I made an appointment with my physical therapist and headed back. I also wanted to go to acupuncture, but unfortunately my acupuncturist was out of the office due to surgery so I was unable to see my miracle worker to do something about this muscle. My acupuncturist is seriously amazing---she uses Eastern medicine to help injuries, including acupuncture needles, cupping (made famous by Jennifer Anniston) laser therapy and massage. I LOVE visiting her, and she helped me recover last time and has consistently loosened my tight hamstrings that I get from running. I visit her about once a month and I look forward to it all month! 

My PT told me what I feared. My posterior tibialis is enflamed from overuse. It makes me so mad----overuse? Are you kidding? I run about 12-18 miles per week, that's it. I cross train like crazy. I do at least 3 Pilates classes per week, and it ends up being more because I teach 2 classes and demo a lot. I do yoga and spin a couple of times a month too, so you'd think I'd be preventing injury here. Wrong.

I think I just have weak ankles and poor blood flow. My PT massages and does ultra sound on the area when I visit him to try to increase the blood flow since mine is so slow. Last time I had the injury in my other ankle, I ran for so long through the pain that the injury was much worse. It was apparent after 6 months that it would not heal on it's own, so I was subjected to an invasive treatment where they took blood out of my arm, spun it, and injected it into the muscle. I couldn't walk without a boot for about a month and 3 months later I ran Hood to Coast. I would say the procedure was worth it but not anything I'd ever want to go through again! So I am really trying to heal on my own through the PT, acupuncture and NOT RUNNING!

So, to get to the point about my non-running work-out, here is generally what I have been doing!!

Monday: Pilates Reformer + 30 minute on elliptical + PT exercises (takes about 8 minutes)
Tuesday: Either 45 minutes elliptical + PT exercises or water jogging (snore) for 30 minutes
Wednesday: Pilates Reformer + 30 minutes on elliptical + PT exercises (takes about 8 minutes)
Thursday: Group Centergy class, which is like yoga but much faster pace with music
Friday: Mat Pilates + 20 minutes elliptical + PT exercises
Saturday: Teach Mat Pilates, somewhat of a rest day
Sunday: Elliptical or spin bike

This is me doing Pilates the last time I was injured. I really turned to Pilates back then since it was one of the only things I could do! I can't believe how short my hair was!

The elliptical is getting so boring! Do you have any suggestions of what to do to mix it up? I really can't do much impact work right now.

A Little Drunk on You and High on Summertime!

These song lyrics from Luke Bryan are the story of my life right now! I have been enjoying summer----maybe a little bit too much. I have recently gone through some big changes in my life that have turned out to be huge blessings and have left me happier than I ever thought possible! 

I just wanted to share one of my happier days! This photo was taken last weekend out on the boat with two of my closest friends, Hannah and Holly. I've known Hannah since 7th grade and feel like I know everything about her, and I met Holly about a year ago through Pilates training. We have gotten really close in the last 6 months and I love her!

Cafe Allegro in Tigard

We don't venture over to Tigard too often but I wanted to try this Italian place since it is right next to Tigard Winecrafters, where we went to make our own wine recently. It is a cute little cafe with a family atmosphere. The portions were huge and it tasted like authentic Italian.

 Caesar salad. It was so big for just a starter!
 I ordered the Caprese salad. Again, huge! I honestly could have eaten this and the sourdough bread they brought and been full. It was a beautiful presentation but the tomatoes weren't the best. It would be amazing if tomatoes were in season!
 My friend ordered an Calzone Italia. It was huge and he only ate half.
I ordered the Proscuitto Carbonara. It had a parmesan and egg cream sauce with veggies and proscuitto. It was really good but a little too creamy for my liking.
 I wanted to show the inside of the calzone but it's so cheesy and saucy you can't really see the meat!
I could only finish this much of the pasta:) There was so much in this bowl that I took home half and ate that for two meals! Dinner the next day and lunch the following. I did add some broccoli to it though, because I can never have enough veggies:) 

What is your favorite Italian restaurant? I really like the lasagna at Fratelli in the Pearl but I'd like to hear any other recommendations! Why do you think Italian places always give you such huge portions!?

I got to celebrate Liz's upcoming nuptials again this weekend! If you remember, we recently had her Bachelorette party. It was decorated super cute, using her wedding color purple.

The Best Fish Taco Sauce ever....from Pinterest!

This sauce is amazing.....try it out!

 I adapted the recipe to the below. I just took out a couple things and added in a few others.

1/2 cup Greek yogurt
1/2 cup reduced fat mayonnaise (you can use full fat, but, the spices are so delicious, you won’t miss that particular flavor contribution)
1 lime, cut in half
1/2 teaspoon cumin
1/2 teaspoon ground coriander
1/2 teaspoon dried oregano
1/4 teaspoon ground chipotle chili powder
1 generous squirt of Sirracha sauce
1 tablespoon fresh cilantro, chopped

 The sauce is in the back corner of all these fish taco ingredients! It's pretty spicy---if you are not a fan of spicy food then this sauce probably isn't for you.

I used Mahi Mahi from Trader Joe's with some lime spices that I got in Florida. I put them on corn tortilla's that were lightly fried and added cheddar cheese, spinach from my community garden plot, sliced cucumbers and Mahi Mahi with this amazing sauce. It was yummy and satisfying, plus pretty spicy!

Ringside Steakhouse

I lived literally across the street from this place for 3 1/2 years and had only been for happy hour. I thought it was high time to try out the steak! I now live only about 5 blocks away so it was a nice little walk over there on a Sunday evening. I have always heard about the delicious steak and here is what we got!

 Top Sirloin Steak with garlic mashed potatoes and grilled veggies. The sauce on the steak was really good--and it had mushrooms. The steak was delicious and at first I thought those 3 pieces were kind of small but turned out I couldn't even finish them! I put them on my salad the next day for lunch.
 My friend ordered the same thing but with a baked potato instead. I didn't take a photo but his potato came with a little mini baked potato bar of little dishes of chives, bacon, cheese, sour cream and more.

I got the chocolate silk pie or something like that---it was waaaaay good. I can still taste this in my mouth! It was super rich but I ate all of it.

We walked out of this place super stuffed and happy. The restaurant atmosphere is kind of interesting. The lights are all out and there are just candles and little lamps that line the room. So it was pretty dark. I did like the mood it created, but being one of the nicer days of the summer so far it made it feel like winter. They also had a nice selection of wine that I didn't photograph, but I had a glass of an Oregon Pinot and it was really good. Most of the time my experience is that the Oregon Pinot's on the menu by the glass are the cheapest ones from the vineyard, but not here. When we left, they gave us a coupon for the Ringside Fish house down by Pioneer Square to use anytime this summer. I'm thinking about it because we've never been there, but probably not because I think there are a lot more original restaurants around that we could try. There will always be steakhouses!
